Vegan Sweet Potato Garbanzo Bean Burgers

I made these on a hot grill pan, but they adapt easily to an outdoor grill. To prevent sticking and add a touch of richness, brush the pan with a vegan butter substitute before cooking.

The recipe is naturally gluten-free and contains no artificial flavors or preservatives when you use wholesome ingredients. I often keep cooked sweet potatoes in the fridge, which makes these burgers quick to pull together. If you don’t have one ready, roast or boil a sweet potato until tender, then mash.

In a large bowl, mash one cooked sweet potato with drained, rinsed garbanzo beans, then fold in the remaining ingredients until the mixture holds together. The texture resembles black bean burgers—soft but moldable. This batch makes six medium patties, or four larger ones if you prefer.

When the grill pan is hot, cook the patties over medium heat for about five to six minutes per side, until they develop a light crust. Toast your buns briefly on the pan—15 to 20 seconds per side—to get them warm and slightly crisp.

Ingredients

  • 1 large sweet potato cooked
  • 15 ounces garbanzo beans drained and rinsed
  • ½ cup red lentils cooked
  • cup nutritional yeast
  • 2 tablespoons tahini
  • 2 teaspoons curry powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic salt
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon black pepper
  • 6 buns

Garnish

  • avocado slices

Instructions

  • Mash the sweet potato and garbanzo beans in a large bowl. Fold in the remaining ingredients until well combined. Form the mixture into 6 patties.
  • Melt one teaspoon of butter substitute in a grill pan over medium heat. Cook 3 patties at a time, about 5 minutes per side, until lightly crusted. Remove and repeat with the remaining patties.
  • Brush the buns with the remaining teaspoon of butter substitute and toast each side on the hot grill pan for 15–20 seconds.
  • Serve each burger topped with avocado slices.

Notes

If making four larger patties, cook each side 1–2 minutes longer for a firmer crust.
