This risotto is a family favorite because it’s comforting and straightforward. You can enjoy cooking with a glass of wine while the dish comes together. It’s also convenient to prepare ahead: refrigerate for 3–5 days or freeze for up to three months. Prepare toppings fresh for best flavor and texture.

How to achieve a creamy mushroom risotto

The creaminess comes from two things: the right rice and plenty of hot liquid. Use arborio rice and warm stock (chicken, beef, or vegetable). White wine adds a touch of acidity and depth; if you prefer not to use wine, substitute a splash of lemon juice or verjus, or simply use extra stock.

Always add hot stock to the rice; cold liquid slows cooking and prevents the rice from releasing starch. Frequent stirring helps coax the starch from the rice and produces the silky texture risotto is known for.

Ingredients

  • 4 cups chopped white or brown mushrooms
  • 1/4 cup olive oil
  • 1/2 shallots diced
  • 2 Tbs butter
  • 2 cups ARborio rice
  • 1/2 cup white wine (optional)
  • 6 cups chicken or vegetable broth, warmed
  • 3/4 cup Parmesan, grated
  • salt to taste
  • dash pepper

Instructions

  • In a large skillet over medium heat, add olive oil and sauté the chopped mushrooms until golden brown. Season with salt and pepper. Remove mushrooms and set aside.
  • In the same skillet over medium-high heat, melt 2 tablespoons of butter and sauté the diced shallots until soft. Add the arborio rice and stir to coat each grain in the fat.
  • Lower the heat to medium, add the white wine (if using), and stir until it has mostly evaporated, about 3–5 minutes.
  • Add warmed broth 2 cups at a time, stirring frequently and allowing the liquid to be absorbed before adding more. Continue this process until the rice is tender and creamy.
  • When the rice reaches a creamy consistency, stir in the grated Parmesan and the sautéed mushrooms. Adjust seasoning with salt and pepper.
  • Serve immediately, garnished with shaved Parmesan and freshly chopped parsley or cilantro. Enjoy!
