Lately we’ve been making a conscious effort to eat more fruit and vegetables, and this colorful fruit salad has become a family favorite. It’s quick to assemble, uses simple ingredients, and keeps the bright, natural flavors of the fruit. I used strawberries, raspberries and blueberries, plus apples for a bit of crunch. You can easily swap in watermelon for a juicier option or cut the apples into festive shapes for a holiday picnic.

The dressing is a simple mix of lime juice, olive oil and honey that brightens the fruit without overpowering it. Prepare the fruit and chill until serving, then toss with the dressing just before you serve so everything stays fresh and vibrant.

Ingredients
1 lb strawberries
1 pt blueberries
2 apples
6 oz raspberries
1/4 cup extra virgin olive oil
1/4 cup lime juice
1/4 cup honey

Directions
1. Whisk together the olive oil, lime juice and honey to make a light dressing. Set aside.
2. Wash, hull and slice the strawberries.
3. Wash and gently pat dry the raspberries and blueberries.
4. Wash, core, peel and chop the apples.
5. To prevent the apples from browning, soak them for about 15 minutes in a mixture of 1 tablespoon lemon juice and 1 cup water, then drain.
6. Combine all the prepared fruit in a large bowl and refrigerate until ready to serve.
7. Toss the fruit with the dressing just before serving to keep the texture and color fresh.
