How to Make Chocolate Brownie Cookies

These cookies come together quickly; the main waiting time is chilling the batter so it becomes scoopable. The method is straightforward and forgiving.

1. Melt chopped dark chocolate and butter together in short bursts in the microwave, stirring between 15-second intervals until smooth.

2. Stir in the maple syrup and vanilla, then whisk in the eggs until the mixture is glossy and combined.

3. Fold in the dry ingredients — whole wheat pastry flour, baking powder, and salt — until just combined. The batter should be thick but pourable, similar to pancake batter.

4. Freeze the batter for at least 1 hour, or until it’s firm enough to scoop into tablespoon-sized portions.

5. Preheat the oven to 350°F (175°C). Drop rounded tablespoons of dough onto a lined baking sheet, spacing them a couple inches apart.

6. Bake 6–8 minutes, until the cookies are just set but still soft in the center. Let cool on the sheet for a few minutes, then transfer to a wire rack to finish cooling.

The frosting is very simple and naturally flavored with maple:

Beat room-temperature cream cheese with pure maple syrup until smooth. If the cream cheese is still firm, soften the mixture for a few seconds in the microwave until it blends easily. The result is a spreadable, pipeable frosting perfect for decorating.

If you like, use the frosting as a filling to sandwich two cookies together for whoopie-pie-style treats. For a seasonal twist, pipe snowmen or other holiday motifs instead of spiderwebs — the frosting adapts well to different designs.

How to Decorate With Frosting Spiderwebs

A disposable zip-top bag makes a simple pastry bag: tuck one corner into a cup and fold the bag’s edges over the cup rim. Spoon the frosting into the bag corner, squeeze out excess air, seal, and twist the top to form a small piping bag.

Trim a tiny bit off the bag corner to start; you can always snip more for a larger opening. Pipe concentric circles of frosting on each cookie, then drag a toothpick outward from the center to the edge at intervals to create a spiderweb effect.

For an easier option—great for little helpers—pipe quick, parallel lines back and forth to create a mummy look. You can line cookies up and drizzle several at once for faster decorating.

3 DOZEN COOKIES

Ingredients:

Cookie Ingredients

  • 1 cup chopped dark chocolate
  • 3 tablespoons butter
  • 2/3 cup pure maple syrup
  • 1 teaspoon vanilla
  • 3 eggs
  • 1 cup whole wheat pastry flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Frosting Ingredients

  • 3 oz cream cheese, room temperature
  • 1 1/2 tablespoons pure maple syrup

Instructions:

For the cookies:

  1. In a microwave-safe bowl, combine the chopped chocolate and butter. Microwave in 15-second intervals, stirring between each, until fully melted (about 45 seconds).
  2. Stir in the maple syrup and vanilla. Transfer to a larger bowl if needed and whisk in the eggs until smooth.
  3. Add the whole wheat pastry flour, salt, and baking powder; whisk until just combined. The batter should be thick but pourable, similar to pancake batter.
  4. Freeze the batter for at least 1 hour, until it can be scooped with a spoon.
  5. Preheat the oven to 350°F (175°C).
  6. Scoop tablespoonfuls of dough onto a parchment-lined or silicone-lined baking sheet. Bake 6–8 minutes, until the cookies are just set. Cool briefly on the sheet, then transfer to a rack.

For the frosting:

  1. Blend the softened cream cheese and maple syrup until smooth. If needed, microwave in 10-second increments to help it come together.
  2. To pipe, place the corner of a zip-top bag into a cup and fold the bag over the cup edges. Spoon frosting into the bag, squeeze out excess air, seal, and twist the top to form a small piping bag.
  3. Trim a tiny corner off the bag and pipe the frosting onto the cookies. For spiderwebs, pipe concentric circles and drag a toothpick from center to edge at intervals. For mummies, pipe quick parallel lines back and forth.
