  • 6 boneless, skinless chicken breasts, about 1 1/2 inches thick
  • 1 24-ounce package of prepared mashed potatoes (or equivalent homemade)
  • 1 large egg, whisked
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3 tablespoons melted butter, divided
  • 1/2 teaspoon grainy brown mustard
  • 1 (0.9-ounce) packet Béarnaise sauce mix (prepare according to packet instructions)
  • 1 tablespoon salt (for brine)
  • 4 cups warm water (for brine)
  • Additional salt, pepper, paprika for seasoning
  • Dried parsley for garnish

Instructions

  1. Add chicken breasts to a bowl with 1 tablespoon salt and 4 cups warm water. Let sit 15–20 minutes at room temperature. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine melted butter and grainy mustard. Whisk, then divide into two bowls—one for brushing the raw chicken and one reserved for brushing the finished potatoes to avoid cross-contamination.
  3. In another bowl, whisk the egg and stir in 1 teaspoon dried parsley, 1/2 teaspoon paprika, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder.
  4. Place the mashed potatoes in a bowl and stir until smooth. Warm slightly if needed, but do not make them hot; cool before proceeding if they become too warm.
  5. Fold the Parmesan and the seasoned whisked egg into the mashed potatoes until well combined.
  6. Remove chicken from the brine, discard the brine safely and sanitize the sink, then pat the chicken dry with paper towels.
  7. Line a baking sheet with foil or parchment and spray with oil. Arrange chicken breasts on the sheet.
  8. Brush each breast with the butter-mustard mixture reserved for raw chicken, then discard that bowl. Lightly season the tops with salt, pepper, garlic powder, onion powder, paprika, and parsley.
  9. Bake the chicken 15–20 minutes. Ovens vary—use an instant-read thermometer. Target about 140°F (60°C) internal before adding the potato topping.
  10. When chicken reaches ~140°F, remove from oven and lower oven temperature to 350°F (175°C).

  12. Brush the potato topping with the remaining melted butter. Return to the oven 10–12 minutes, until the potatoes are golden and slightly puffed and the chicken reaches at least 155°F (68°C). The chicken will rise a few degrees more while resting.
