Ingredients

  • 1 English cucumber
  • 1 small red onion
  • 1 cup cherry tomatoes
  • 4 stalks asparagus
  • 1/4 cup rice vinegar
  • 2 tablespoons water
  • 1/2 teaspoon sugar

Instructions

  • Trim both ends of the cucumber, cut it in half lengthwise, and shave into thin strips using a food processor, mandolin, or a sharp knife. Repeat for the red onion, slicing it thinly.
  • Halve the cherry tomatoes. Cut the asparagus on the diagonal into approximately 1-inch pieces; blanch briefly if you prefer it slightly tender, then cool.
  • Combine all the vegetables in a bowl. In a small bowl, whisk together the rice vinegar, water and sugar until the sugar dissolves. Pour the dressing over the vegetables and toss gently to coat.
  • Let the salad rest for at least 10 minutes so the flavors meld. Taste and adjust seasoning if desired, then arrange on a platter and serve.
