  • 250g / 1/2 lb tortellini (any filling)
  • 1 tbsp olive oil (from the jar of sun-dried tomatoes if available)
  • 4–5 sun-dried tomatoes, packed in oil, sliced
  • 2 cloves garlic, pressed or finely chopped
  • 4 tbsp crushed tomatoes or tomato passata
  • 125ml / 1/2 cup double cream or heavy cream
  • 50g / 1/2 cup freshly grated Parmesan
  • Salt and pepper to taste
  • 4–5 fresh basil leaves, torn (or 1/2 tsp dried basil)

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to the package directions. Reserve 1/2 to 1 cup of the cooking water before draining.
  2. While the pasta cooks, heat the olive oil in a skillet over medium heat. Add the sliced sun-dried tomatoes and garlic and sauté briefly for 1–2 minutes, taking care not to brown the garlic.
  3. Stir in the crushed tomatoes or passata and the sliced basil. Cook for another minute, then pour in the cream and stir to combine.
  4. Sprinkle in the Parmesan and stir until it melts into the sauce. If the sauce is too thick, add a splash of the reserved pasta water until you reach the desired consistency.
  5. Drain the tortellini and add it to the pan with the sauce. Toss gently to coat and heat through. Taste and adjust seasoning with salt and pepper. Serve immediately with extra Parmesan and basil.
