Caramelized Onion, Goat Cheese & Brussels Sprout Pizza Bites

These Brussel Sprout Pizza Bites with Caramelized Onions and Goat Cheese make a quick, elegant appetizer or snack. They’re easy to prepare and bring together the savory crunch of shaved Brussels sprouts, sweet caramelized onions, tangy goat cheese and a finishing drizzle of balsamic glaze.

One of my favorite pizza topping combos is shaved Brussels sprouts, caramelized onions and balsamic glaze. I often keep plain frozen cheese pizzas on hand as a blank canvas for fresh toppings—this mixture of sautéed Brussels and onions with a sweet-tangy glaze is one of my go-tos. For these bites I paired the topping with creamy goat cheese for a rich, tangy contrast that makes every bite irresistible.

These bites are great for movie nights, casual get-togethers, or whenever you want a simple, satisfying snack. They come together quickly and deliver layered flavors and textures that feel special without much fuss.

How to Make These Brussel Sprout Pizza Bites with Caramelized Onions and Goat Cheese:

  1. Preheat your oven to 400°F (200°C).
  2. Heat 1 tablespoon extra virgin olive oil in a skillet over medium heat. Add 1 cup sliced yellow onion and sauté for 12–15 minutes, stirring every minute or so, until deeply caramelized. Remove the onions and set aside.
  3. In the same pan, add 2 cups shredded Brussels sprouts and sauté 2–3 minutes until slightly softened. Return the caramelized onions to the pan and cook together 1–2 more minutes. Season with 1/4 teaspoon salt and a pinch of pepper, then remove from heat.
  4. Line a baking sheet with parchment paper and arrange 4 slices of sturdy bread (cut into quarters) on the sheet.
  5. Toast the bread in the oven for 5 minutes.
  6. Remove the sheet and spread about 1/3 cup room-temperature goat cheese across the toasts using a butter knife.
  7. Top each toast with the Brussels sprout and onion mixture, then return to the oven and bake 4 more minutes to warm through.
  8. Remove from the oven, crack fresh black pepper over each bite, plate and drizzle with about 2 tablespoons balsamic glaze.
  9. Serve immediately and enjoy.

Tips & Tricks

  • If you don’t have goat cheese, substitute low-moisture mozzarella slices and allow them to melt during the final bake.
  • Store-bought balsamic glaze works well here. If you prefer homemade, a simple reduction of balsamic vinegar and a touch of sweetener will do the trick—use sparingly for best balance.
  • These bites are best enjoyed right away. If you expect leftovers, hold off on drizzling the glaze. Store cooled bites in an airtight container in the refrigerator for 2–3 days.
  • To reheat, place bites on a parchment-lined baking sheet in a 400°F oven for 4–5 minutes, then add balsamic glaze after reheating to avoid burning the glaze.

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 cup sliced yellow onion (about one small-medium onion)
  • 2 cups shredded Brussels sprouts (about 4–6 sprouts depending on size)
  • 4 slices sturdy bread, cut into quarters (Ezekiel or other hearty bread works well)
  • 1/3 cup goat cheese, room temperature
  • 2 tbsp balsamic glaze
  • 1/4 tsp salt
  • Pinch of black pepper

Instructions

  • Preheat oven to 400°F (200°C).
  • Heat oil in a pan over medium heat. Sauté sliced onions 12–15 minutes until caramelized, stirring occasionally. Remove and set aside.
  • Add shredded Brussels sprouts to the pan and cook 2–3 minutes. Return onions to the pan, sauté together another 1–2 minutes, season with salt and remove from heat.
  • Arrange quartered bread on a parchment-lined baking sheet and toast in the oven for 5 minutes.
  • Spread room-temperature goat cheese over each tartine, top with the sprout and onion mixture, then bake 4 more minutes.
  • Finish with cracked black pepper and a drizzle of balsamic glaze. Serve immediately.
