There are many variations of beef stew; this one is traditional and focused on a deep, flavorful gravy. It’s straightforward to make and very forgiving—perfect for batch cooking or serving a crowd.

Here’s what you will need

Essential tools: A Dutch oven (a heavy, deep casserole pot) is ideal. You can also use an Instant Pot or a slow cooker if preferred.

Beef: Use a braising cut such as chuck steak (also called braising steak). Beef shin, beef cheek, or a mix of chuck and cheek also work well—these cuts become tender with long, slow cooking.

Flavor boosters: I use beef consommé in addition to beef broth for extra depth, and sometimes a packet of dried onion soup for an instant savory lift.

Cooking liquid: Red wine adds richness and complexity. If you prefer not to use wine, substitute additional beef broth, ale, or stout.

Vegetables: Onions, carrots, celery and garlic are the aromatic base. I also add potatoes and butternut squash; peas are optional depending on preference.

Seasonings: Tomato paste, Worcestershire sauce, balsamic vinegar and soy or tamari, plus bay leaves, rosemary and thyme, round out the flavor.

Need to thicken your beef stew?

The stew will naturally thicken as the potatoes and squash break down, but here are other effective methods:

  • Toss beef cubes in a few tablespoons of flour before browning.
  • Stir in a cornstarch slurry (cold water plus cornstarch) near the end of cooking.
  • Use a small amount of xanthan gum as an alternative thickener.
  • Blend some of the cooked vegetables and gravy with an immersion blender, then return to the pot.

How to Make Dutch Oven Beef Stew

Read through the steps before you begin. Full ingredient quantities and timings are provided below in the recipe card section.

Preheat the oven to 160°C (325°F). Season the beef with salt and pepper. Heat oil in the Dutch oven and sear the beef in batches until well browned on all sides—browning builds flavor but you don’t need to cook the meat through. Remove the browned pieces and set aside.

Deglaze the pot with a splash of wine, scraping up any browned bits from the bottom. Add a little more oil if necessary and cook the onions, garlic, carrots and celery over low heat for about five minutes, until softened.

Stir in the tomato paste, Worcestershire sauce, balsamic vinegar and soy sauce. Add the potatoes and squash, then return the beef to the pot. Pour in the consommé (or broth) and red wine and bring to a gentle simmer. Add the dried onion soup mix if using, together with bay leaves, rosemary and thyme.

Cover the pot and transfer to the oven. Cook for 90 minutes to two hours, until the meat is fork tender and flavors are well developed. If you simmer on the stovetop, cook gently and check liquid levels occasionally.

Return the pot to the stovetop and check for any final adjustments. If adding peas, stir them in now and cook briefly. Thicken the stew with a cornstarch slurry or a pinch of xanthan gum if needed. Remove bay leaves, taste and adjust seasoning with salt and pepper.

Serve hot with crusty bread and a generous sprinkle of chopped fresh parsley.

Beef Stew in your Slow Cooker

Brown the beef and soften the vegetables on the stovetop, then transfer everything to the slow cooker. Cook on LOW for 8–10 hours or until the meat and potatoes are tender. Reduce the liquid slightly if your slow cooker produces a lot of extra broth.

Make it in your Instant Pot

Use the Sauté function to brown the beef and soften the vegetables, working in batches if needed. Add liquids and seasonings, then pressure cook on HIGH for 35 minutes. Allow 15 minutes natural release, then release remaining pressure. Reduce the sauce with the Sauté setting if it needs thickening.

  • 5 carrots, diced

  • 2 tsp garlic paste or 4 cloves minced garlic
  • 3 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 tbsp soy sauce or tamari
  • 2 tbsp balsamic vinegar
  • 14 oz (400g) tin beef consommé (or beef broth)
  • 1 cup (240ml) beef broth
  • 1 cup (240ml) red wine (optional)
  • 1 packet dried onion soup (optional)
  • 3 large potatoes, cubed
  • 1 cup butternut squash, peeled and cubed (optional)
  • 2 bay leaves, 1 sprig rosemary, 1 tbsp fresh thyme leaves
  • Salt and pepper to taste, fresh parsley to serve

Instructions

Instant Pot: Use 2 cups broth + 1 cup wine. Brown beef and soften vegetables with Sauté, then pressure cook 35 minutes on HIGH with 15 minutes natural release.

Slow cooker: Use 2 cups broth + 1 cup wine. Brown beef and cook vegetables first if possible, then cook on LOW for 8–10 hours until tender.
