Berry smoothie bowl = ice cream for breakfast!

I’ve always eaten my smoothies with a spoon. Ever since I got a high-speed blender several years ago, I’ve been hooked on making ultra-thick, soft-serve style smoothies and fruit-based “ice creams,” for breakfast, after-school snacks, or dessert. They’re sweet and delicious, loaded with fruits and vegetables, and require no added sweeteners. Best of all, kids think they’re getting a treat.

Easy superfood smoothie bowl recipe

This superfood smoothie bowl is one of my favorites. It combines powerhouse ingredients: wild berries (antioxidant-rich), goji berries (a concentrated source of protein and vitamin C), raw cacao powder (a tasty source of magnesium and iron), nut butter (healthy fats and protein), and hemp, chia or flax seeds (fiber and omega-3s). Frozen bananas create a rich, creamy texture without adding ice. Tip: peel any bananas you don’t eat and freeze them in a bag each week so you always have frozen bananas on hand.

How to make a smoothie bowl

For a thick, spoonable smoothie bowl you’ll ideally use a high-speed blender. If you don’t have one, a food processor can work, or add an extra ½ cup of milk and blend in a regular blender for a pourable smoothie. Follow these tips for the best texture and flavor:

  • Add the liquid first: Pour nut milk or the milk of your choice into the blender to help ingredients circulate.
  • Next add frozen fruit: Frozen berries, mango, pineapple or cherries work well. Frozen banana provides creaminess without ice.
  • Follow with delicate ingredients: Add softer items such as fresh spinach or kale, nuts and seeds last.
  • Stir with a tamper if available: If your blender includes a tamper, use it to keep thick mixtures moving and blend on increasing speed until thick and creamy.

Superman definitely ate smoothies

Now for the fun part: serve the smoothie in bowls and top it like a sundae. Fresh fruit, nuts, seeds, granola, coconut flakes and cacao nibs add texture, flavor and extra nutrition. Play with toppings to keep each bowl interesting—pow! crunch! delight!

Superfood Berry Smoothie Bowl

This sweet and creamy smoothie bowl is brimming with nutritional superfoods: raw cacao powder, goji berries, seeds, nut butter and berries. It makes a satisfying breakfast and is packed with protein to keep you full through the morning. Top with toasted coconut, cacao nibs, fresh berries, chopped nuts or a bit of granola. To turn it into a drinkable smoothie, add 1/4–1/2 cup extra milk or use a food processor if you don’t have a high-speed blender.
Servings: 2
Prep Time: 5 mins
Total Time: 5 mins

Ingredients

  • 1–1 1/2 cups nut milk (or milk of your choice)
  • 2 frozen bananas, each cut into thirds
  • 1 cup frozen mixed berries (wild blueberries, strawberries, blackberries and/or raspberries)
  • 2 tablespoons raw cacao powder
  • 2 tablespoons almond butter (or nut butter of your choice)
  • 1–2 tablespoons goji berries (optional)
  • 1 tablespoon hemp, chia or flax seeds
  • 1/4 teaspoon cinnamon
  • Pinch sea salt
  • Toppings such as cacao nibs, toasted coconut flakes, chopped toasted nuts, fresh berries or sliced fruit, and/or granola

Instructions

  1. Pour 1 cup of the almond milk into the blender, then add the frozen bananas and the remaining ingredients.
  2. Blend until smooth, using a tamper if available to push ingredients toward the blade. Add another splash or two of milk if the mixture is too thick.
  3. Divide the smoothie into bowls and garnish with your choice of toppings.

Notes

Tips:

  • Add the liquid first: helps ingredients circulate around the blade.
  • Add frozen fruit next: frozen banana gives a creamy texture without ice.
  • Add delicate foods last: softer items like fresh greens, nuts and seeds go in after the frozen fruit.
  • Use the tamper: if your blender has one, stir with it while gradually increasing speed to get a thick, creamy result.
