How To Make Roasted Vegetable Salad

1. Wash and chop broccoli, asparagus and sweet potatoes into bite-sized pieces. Seed and quarter the pepper.

2. Preheat the oven to 400°F (200°C).

3. If you plan to make the cashew sauce, soak cashews in hot water for about 20 minutes.

4. Toss sweet potatoes with olive oil, salt and optional chili powder until evenly coated. Spread in a single layer on a parchment-lined baking sheet.

5. Toss broccoli, asparagus and peppers with oil and seasoning and spread on the same sheet pan or a second pan if needed.

6. Bake sweet potatoes for about 25–30 minutes; remove the broccoli, asparagus and peppers after 10–15 minutes. Flip all vegetables halfway through roasting and keep an eye on them the final minutes.

7. While the vegetables roast, chop cucumber, pit and slice olives, and dice the onion.

8. Make the cashew sauce by blending soaked cashews with jalapeños, basil, garlic and a little water until smooth and creamy.

9. Let roasted vegetables cool slightly, then combine them with the chopped fresh vegetables in a large bowl. Toss with the cashew sauce to coat.

10. Serve immediately and enjoy while warm or at room temperature.
