We all have those bananas on the counter—the ones bought with the best intentions and then left to ripen until they’re brown and soft. Instead of letting them go to waste, turn them into baked oatmeal. This version combines ripe bananas, oats, and mini chocolate chips, all topped with a crunchy streusel for a breakfast that feels a little like coffee cake.

Unlike the sticky, thin oatmeal I grew up with, baked oatmeal has more body and texture. With the addition of streusel it becomes indulgent without feeling like dessert for breakfast—though it’s close. If you love banana and chocolate together, this recipe is an easy, comforting choice for busy mornings or a cozy weekend brunch.

Try this Chocolate Chip Banana Streusel Baked Oatmeal for breakfast the next time you have ripe bananas. Great recipe that is delicious warm or cold!

This recipe started from a blueberry-banana baked oatmeal base, but I left out the berries and added chocolate chips and a buttery pecan streusel. The streusel creates a crunchy contrast to the tender baked oats below—it’s worth the little extra effort and keeps well for several days in the fridge.
