These mini poppers are ideal for parties or summer barbecues. Can you guess the secret ingredient? Here’s a hint: they’ll pop in your mouth. Yes — Pop Rocks. It sounds odd, but they add a subtle, exciting fizz without overpowering the dessert. I made mine tiny so you can enjoy a single popper in one bite, but you can scale them to any size.
To begin, combine the dry ingredients in a food processor and pulse until mixed. If you don’t have a food processor, see the notes in the recipe for a simple bowl method.

Cut cold butter into small cubes and blend it into the dry mixture until the texture is crumbly. Keep the butter cold for flaky shortcakes.

Drizzle in the milk while pulsing just until the dough starts to come together. Avoid overmixing to keep the biscuits tender. I used skim milk but you can use whole milk, half-and-half, or cream for richer results.

Turn the dough out onto a lightly floured surface. Pat or gently roll it into a rectangle about 3/4 inch thick. Handle the dough as little as possible — be gentle.

Cut rounds with a small biscuit or cookie cutter — I used about 1-inch rounds for bite-size poppers. If you don’t have a cutter, you can drop spoonfuls of dough onto the baking sheet or bake them in a mini muffin pan; just adjust bake time accordingly.

Arrange the biscuits on prepared baking sheets lined with parchment or silpat. Lightly brush the tops with milk and sprinkle with a bit of sugar before baking for a golden, slightly crunchy top.
While they bake, hull and chop your strawberries. If you prefer sweeter fruit, sprinkle a touch of sugar over the chopped strawberries and let them sit briefly to release juices.

Bake until the bottoms are golden brown, then cool the biscuits on a wire rack so they won’t continue to bake on the hot pan. Imperfect shapes are fine — once halved and filled, they look great.

When biscuits are cool, slice each horizontally. Add a dollop of whipped topping or sweetened whipped cream to the bottom half, sprinkle with Pop Rocks, then top with chopped strawberries and the biscuit top. The Pop Rocks provide a playful popping sensation that’s subtle but delightful.

Mini Strawberry Shortcake Poppers
Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar, divided
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 3/4 cup milk, divided
- 1 1/2 cups defrosted whipped topping or sweetened whipped cream
- 6 small packets strawberry Pop Rocks
- 1 1/2 cups strawberries, chopped
Instructions
- Preheat oven to 400°F. Line baking sheets with parchment paper or silpats.
- Place flour, 2 tablespoons sugar, baking powder, and salt in a food processor and pulse a few times to combine. (See notes for a bowl method.)
- Add the cold, chopped butter and process until the mixture forms small crumbs.
- Drizzle 2/3 cup milk into the processor while running and process until the dough just comes together. Reserve remaining milk.
- Turn the dough out onto a floured surface and pat into a rectangle about 3/4 inch thick.
- Cut rounds about 1 inch in diameter. Gather scraps gently, reform, and cut again — avoid overworking the dough.
- Place cut biscuits on prepared sheets. Lightly brush tops with milk and sprinkle with the remaining sugar. Bake at 400°F for 10–15 minutes or until golden brown. Cool on a wire rack.
- To assemble, slice biscuits in half horizontally. Place a dollop of whipped topping on the bottom half, add Pop Rocks, then strawberries, and finish with the biscuit top.
Notes
Substitutions: Any firm fruit can replace strawberries, and you can choose any Pop Rocks flavor. For sweeter fruit, sprinkle sugar on the fruit before assembling.
