Ingredients

  • 1 (14-ounce) jar pizza sauce, use a sugar-free sauce
  • 1 tablespoon tomato paste
  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • salt and pepper
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 16 pepperoni slices

Instructions

  1. Combine pizza sauce and tomato paste in a small saucepan. Bring to a boil, then simmer 5–10 minutes, stirring frequently, until thickened.
  2. Preheat oven to 400°F (200°C).
  3. Season the chicken with garlic powder, oregano, salt, and pepper.
  4. Heat olive oil in a large nonstick skillet and brown the chicken briefly on both sides.
  5. Spread half the thickened pizza sauce in a casserole dish large enough for the chicken.
  6. Place the browned chicken in the dish and cover with the remaining sauce.
  7. Bake for 25 minutes. Remove from the oven and sprinkle with mozzarella and Parmesan.
  8. Arrange pepperoni slices on top.
  9. Return to the oven and broil 3–5 minutes until cheese is bubbly and pepperoni is crisp. Serve hot.
