A super easy recipe for thick, decadent chocolate peanut butter fudge. Vegan, gluten-free, dairy-free.

Ingredients

  • 1 ¼ cups unsalted natural peanut butter
  • 1 ¼ cups vegan chocolate chips

Instructions

  • Line a standard loaf pan (I used a 9-inch pan) with parchment or wax paper. Clear space in the freezer for the pan.
  • Combine the peanut butter and vegan chocolate chips in a medium, microwave-safe bowl. Heat in 20-second increments, stirring between each interval, until the chocolate is melted and the mixture is smooth. Alternatively, melt using a double boiler.
  • Pour the mixture into the prepared loaf pan and smooth with a rubber spatula into an even layer.
  • Freeze for about 1 hour, until firm. Remove from the freezer and slice into 18 squares. Store as noted below.

Notes

– I used a 9-inch loaf pan.
– Store in an airtight container in the freezer for 1–2 months. If refrigerated, the fudge keeps up to 2 weeks.
