This hearty paleo salad features only six wholesome ingredients and comes together in minutes. You need radicchio, frisée, an apple, toasted walnuts, olive oil, and balsamic vinegar. It’s excellent alongside roast chicken for a simple, satisfying paleo dinner.
Because it’s quick to prepare, I often make this salad for weeknight meals. Its bright colors and crisp textures also make it a lovely choice for dinner parties and holiday meals. Radicchio Salad with Frisée and Apples works well for High Holidays and is a great option at Passover.

Equipment

This salad is inspired by a version I enjoyed at a restaurant in Boulder; theirs included salami. Replacing the salami with toasted walnuts keeps the dish plant-based while retaining crunch and flavor, making it suitable for those avoiding meat.
Serve this Radicchio Salad with Frisée and Apples alongside roasted or braised mains for a balanced meal. Complementary dishes include:
- Beef brisket
- Baked mustard-lime chicken
- Chicken with cauliflower and olives
