I’m picky about liquor, so rum is my go-to: warm, spicy, and versatile. If you prefer sweeter sips, rum or a dessert wine pairs perfectly with apple cider. This recipe keeps things straightforward and lets the apple and spice shine.
This drink combines the best of fall—apple, warm spices, and rum. It’s made with spiced apple cider, spiced rum, and finished with hard apple cider for a bright, fizzy note. If you like, add a few dashes of lemon or orange bitters, or for extra cinnamon heat, splash in 1/2 oz cinnamon schnapps or Fireball.

Spiced Rum Apple Cider Cocktail
Ingredients
- 2 oz spiced rum such as Captain Morgan
- 1/2 cup spiced apple cider prepared, or see note to make your own
- 1/2 cup hard apple cider
- 1/2 oz cinnamon schnapps or Fireball optional
- Cinnamon sticks and star anise, for garnish optional
Instructions

Fill a highball or rocks glass with ice. Add the spiced rum and spiced apple cider, then stir to combine. Top with hard apple cider until the glass is full. If using cinnamon schnapps or Fireball, add it with the rum and cider. Garnish with a cinnamon stick and a star anise if desired.
Notes
To make spiced apple cider at home: place regular apple cider in a mason jar with 2 cinnamon sticks, 2 star anise, and a few whole cloves. Cover, shake, refrigerate for at least an hour, then strain.
This version was tested with a popular hard apple cider and Captain Morgan spiced rum.
