  • Popsicle sticks or sturdy straws

Ingredients

  • 1 1/2 cups strawberries, stemmed
  • 2 Tablespoons fresh lime juice
  • 5 Tablespoons honey, divided
  • 1/2 cup plain yogurt (whole or 2%)
  • 1/2 cup unsweetened coconut milk
  • 1 1/2 cups blueberries
  • 1/4 cup pomegranate juice
  • 1 teaspoon fresh lime zest

Instructions

  • In a blender, combine the strawberries, lime juice, and 2 tablespoons of honey. Blend until smooth. Pour the purée evenly into the popsicle molds and freeze until firm, about 1 hour. Clean the blender for the next step.
  • In a medium bowl, whisk together the yogurt, coconut milk, and the remaining 3 tablespoons honey until smooth. Pour the yogurt mixture over the frozen strawberry layer, insert sticks into each mold, and freeze until the yogurt is set, about 1 hour.
  • In the blender, combine blueberries, pomegranate juice, and lime zest. Blend until puréed. Pour the blueberry mixture over the frozen yogurt layer and freeze until completely firm, at least 3 hours.
  • To unmold, run the outside of the molds briefly under warm water and gently remove the popsicles. Serve immediately.
