Spicy Jack Bacon Jalapeno Cheeseburgers

Spicy Jack Bacon Jalapeno Cheeseburgers
Ingredients
- 1/2 pound lean ground meat
- 1/4 teaspoon salt (plus pepper and other seasonings to taste)
- 3 tablespoons cheddar cheese, crumbled
- 3 tablespoons diced jalapenos (jarred or fresh, adjust to taste)
- 1 egg white
- 2 slices pepper jack cheese
- 2 strips bacon
- 4 tablespoons sliced jalapenos
- 1 tablespoon light mayo
- 1 tablespoon Tabasco sauce
- 4 hamburger buns
Instructions
- In a bowl, combine the ground meat, crumbled cheddar, salt, pepper or other seasonings to taste, diced jalapenos, and the egg white. Mix until evenly combined; the cheese will make the mixture a bit lumpy but it should hold together.
- Divide the mixture into four equal portions and form into patties.
- Grill the patties over medium-high heat until golden brown and slightly charred, about 3 minutes on the first side. Flip and grill the second side about 4 minutes for medium-rare. At about 3 minutes on the second side, place a slice of cheese on each patty and let it melt for about a minute.
- Place an extra slice of pepper jack on the bottom bun, then top with the hot burger.
- In a small bowl, combine light mayo with Tabasco (adjust to taste) and spread on the top bun. Add sliced jalapenos and bacon, then close the burger and serve.
