I don’t know why I don’t make more casseroles. When I do, they’re always a hit with my family—I just don’t think to make them often. Recently I was flipping through old church cookbooks and found this recipe for pork chops and potatoes. We love both ingredients, and honestly, adding French fried onions makes almost anything better.

Ingredients

  • 6 pork chops
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 3/4 cup sour cream
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 pounds hash browns thawed if using frozen
  • 1 cup French fried onions
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat the oven to 350°F (175°C). Spray a 9×13-inch baking dish with cooking spray.
  • Heat a small amount of oil in a skillet over medium-high heat. Lightly season the pork chops (seasoning salt works well) and sear them briefly on both sides until browned. They do not need to be cooked through.
  • In a bowl, whisk together the cream of mushroom soup, sour cream, milk, salt and pepper. Fold in the hash browns until evenly coated, then spread the mixture evenly in the bottom of the prepared baking dish.
  • Arrange the seared pork chops on top of the hash brown layer. Cover the dish and bake for 45 minutes. Remove the cover, sprinkle the top with shredded cheddar cheese and French fried onions, then bake an additional 10 minutes, or until the cheese is melted and the pork is cooked through. Let rest a few minutes before serving.
