During the hotter months we rely on fresh fruit and simple preparations, and this Watermelon Granita fits that approach perfectly. When temperatures climb (it reached the high 90s here), a bright, icy granita is one of the best ways to cool off.

If you haven’t made a granita before, it’s an Italian frozen dessert with a texture between Italian ice and a snow cone. The best part: no ice cream maker is needed. Blend your ingredients, pour the mixture into a 9×13 pan, and freeze. Every hour for about three to four hours remove the pan and scrape the surface with a fork to create the grainy, flaky crystals that define a granita. When the center is still slightly unfrozen, return the pan to the freezer for another hour and repeat until the entire mixture is flaky and frozen.
This recipe is one of the simplest summer desserts you can make: just four main ingredients—seedless watermelon, a touch of honey for sweetness, freshly squeezed lime juice, and mint for garnish.
