Happy St. Patrick’s Day! Before we move on to the next holiday, celebrate with green beer and then treat yourself to these Cadbury Brownie Bites—mini fudgy brownies filled with a Cadbury Creme Egg and topped with buttery yellow frosting and sprinkles.

Cadbury Creme Eggs are my favorite Easter candy. If I could fill a whole basket with them, I would! These brownie bites are easy to make and always a crowd-pleaser—perfect for Easter brunch, school parties, or an indulgent holiday dessert.

Box brownie mix

Cadbury Creme Mini Eggs (12-pack)

Butter (softened)

Powdered sugar (sifted)

Salt

Vanilla extract

Milk

Yellow food coloring

These brownie bites are simple to prepare and make a festive, shareable Easter treat. Soft brownie around a gooey Cadbury Creme Egg, finished with light buttercream and colorful sprinkles—always a hit.

Ingredients

  • 1 box brownie mix (prepared according to package)
  • 2 Cadbury Creme Mini Eggs (12-pack)
  • 1 cup butter, softened
  • 4 cups powdered sugar, sifted
  • ¼ teaspoon salt
  • 1 tablespoon vanilla extract
  • 2 tablespoons milk
  • 4 drops yellow food coloring
  • sprinkles

Instructions

  • Prepare the brownie batter according to the package directions.
  • Spray a mini muffin tin with non-stick spray.
  • Spoon about 1 teaspoon of batter into each mini cup.
  • Bake at 350°F for 11 minutes. Remove from the oven and let cool 2 minutes.
  • Press an unwrapped Cadbury Creme Egg into the center of each brownie bite. Let cool an additional 2 minutes.
  • Transfer to a wire rack and cool completely before frosting.

For the frosting:

  • Beat the softened butter on medium speed until smooth, about 3 minutes.
  • Add powdered sugar, milk, vanilla, and salt. Increase speed to high and beat until light and fluffy, about 3 minutes.
  • Stir in yellow food coloring until evenly colored.
  • Pipe or spread frosting onto cooled brownie bites (a Wilton 32 tip works well), and finish with sprinkles.

Notes

  • If you don’t have a piping bag or tip, you can spread the frosting with a spoon or small spatula.
