Here’s what we’ll be eating this week:
Meatless Monday: Sweet + Smoky Quesadilla Casserole. A satisfying, meat-free way to start the week. Follow the recipe as written or add whatever vegetables or leftovers you have on hand for extra bulk and flavor.
I’ve designated Monday as our family’s meatless night because it’s budget-friendly and better for the environment. Even my meat-and-potatoes husband goes along with it—especially when I make him a special dessert afterward. I’m nice like that!
Tuesday: Slow Cooker Pork Roast and Cherries. One of Andy’s favorites and perfect for a slow cooker night. It’s comforting, flavorful, and hands-off while it cooks.
Wednesday: Turkey Mac and Cheese Stir Fry. A kid-friendly twist on stir-fry—less messy and full of familiar flavors that kids love. It’s an easy weeknight crowd-pleaser.
Thursday: Slow Cooker Lemon Rosemary Lentil Soup. Another meatless option for the week. Bright lemon and fragrant rosemary make lentils feel light and fresh.
Friday: Bacon Double Cheeseburger Pizza. A fun way to kick off the long weekend. Why choose between pizza or burgers when you can enjoy both in one dish?
